Zesty Vegetable Skewers


1 garlic clove
1 tsp salt
1/3 cup olive or vegetable oil
3 Tbsp lemon juice
1 tsp Italian seasoning
1/4 tsp pepper
8 medium fresh mushrooms
2 small zucchini, sliced 1/2" thick
2 small onions, cut into sixths
8 cherry tomatoes
4 wooden skewers (10 inches)

In a small bowl, mash garlic with salt to form a paste.
Stir in oil, lemon juice, Italian seasoning and pepper.
Thread vegetables alternately onto skewers; place in shallow baking pan.
Pour garlic mixture over kabobs; let stand for 15 minutes.
Grill for 10-15 minutes, turning frequently, or until vegetables are just tender.
