Mashed Potato Bake


3 lbs potatoes, peeled and quartered
2 eggs
1 cup diced fully cooked ham
1 cup (4 ounces) diced part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
3 Tbsp minced fresh parsley, divided
3/4 tsp salt
1/4 tsp pepper
1/8 tsp garlic powder
1 Tbsp butter

Place potatoes in a Dutch oven and cover with water.
Bring to a boil.
Reduce heat; cover and cook for 20-25 minutes or until very tender.
Drain well and mash.
In a large bowl, beat the eggs.
Add ham, cheeses, 2 Tbsp parsley, salt, pepper and garlic powder.
Stir in mashed potatoes.
Transfer to a greased shallow 2-quart baking dish.
Dot with butter.
Bake, uncovered, at 350 degrees for 25-30 minutes or until heated through.
Sprinkle with remaining parsley.
