Smokey Meatloaf


2 lbs ground beef
24 saltine crackers (crumbled)
1/2 cup finely chopped onion
1 Tsp prepared mustard
1 tsp seasoned salt
1/4 tsp pepper
1/4 tsp liquid smoke
2 eggs

Glaze:
1/2 cup ketchup
4 Tbsp finely chopped onion
2 Tbsp brown sugar
2 Tbsp and 2 tsp cooking oil

Before grilling, combine all ingredients for meatloaf; mix well.
Shape into loaf.
Combine glaze ingredients; glaze.
On grill - place meatloaf (on double thickness heavy foil that has
been formed into a shallow pan...cut holes in foil so that juice can
drain away) 6-8" from coals.
Cover with hoood of grill and cook 50-60 minutes, brushing often with glaze.

Alternate Method of Cooking:
Bake on broiler pan (to allow draining) in 350 degree oven for 50-60 minutes.
Can also form the meat into 4 smaller loaves (2 servings per loaf).
