Soft & Chewy Chocolate Bites

4 squares Baker's Unsweetened Baking Chocolate
3/4 cup (1-1/2 sticks) butter
2 cups sugar
3 eggs
1 tsp vanilla
2 cups flour

Preheat oven to 350 degrees.
Microwave chocolate and butter in large microwaveable bowl on HIGH for
2 minutes or until butter is melted.
Stir until chocolate is completely melted.
Stir in sugar.
Blend in eggs and vanilla.
Add flour; mix well.
Refrigerate 15 minutes or until dough is easy to handle
Shape dough into 1" balls.
Place 2" apart on greased baking sheets
Bake 8 minutes or just until set.
Let stand on baking sheet 1 minute.
Press 1 halved caramel, nut, marshmallow or chopped pepperming candy into each cookie.
Transfer to wire racks to cool completely.
