Snickerdoodles


1 cup shortening
1 1/4 cups sugar
2 eggs
2 3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
2 Tbsp sugar
1 Tbsp cinnamon
1 tsp ground nutmeg

Heat oven to 375 degrees.
Cream the shortening and 1-1/4 cup sugar together on medium high speed until light and fluffy, about 
5 minutes or so.
Once the shortening and sugar are sufficiently flugged, add the eggs and vanilla and continue to mix
until you once again have a fluffy texture.
Lower your speed and add the flour mixture (below), beating until just combined.
Stir in flour, cream of tartar, baking soda and salt.
Shape dough by rounded teaspoonfuls into balls.
Mix 2 tablespoons sugar, nutmeg and the cinnamon; roll balls in mixture to coat.
Place about 2 inches apart on cookie sheet lined with parchment paper.  Bake until set 8 to 10 minutes.
Immediately remove from cookie sheet.
