Philadelphia New York Cheesecake


Crust:
6 graham crackers, crushed
3 Tbsp sugar
3 Tbsp butter, melted

Cheesecake:
5 packages (8 oz each) cream cheese, softened
1 cup sugar
3 Tbsp flour
1 Tbsp vanilla
1 cup sour cream
4 eggs

Topping (optional):
1 can (21 oz) cherry pie filling

Heat oven to 325 degrees.
Line 13x9" pan with foil.
Mix crumbs, butter and 3 Tbsp brown sugar; press onto bottom of pan.
Bake 10 minutes.
Beat cream cheese, 1 cup sugar and vanilla with mixer until blended.
Add sour cream; blend.
Add eggs, 1 at a time, mixing on low speed after each just until blended.
Pour over crust.
Bake 40 minutes or until center is almost set.
Cool completely.
Refrigerate 4 hours.
Use foil to lift cheesecake from pan before cutting to serve.
Top with pie filling and serve.

Yield:  16 servings
