1 1/4 cups boiling water 1 1/2 cups flour 1 cup rolled oats 1 tsp baking soda 3/4 tsp cinnamon 1/2 to 1 cup chopped nuts 1/2 tsp salt 1/4 tsp nutmeg 1/2 cup butter, softened 1 cup granulated sugar 1 cup firmly packed brown sugar 1 tsp vanilla 2 eggs Caramel Topping 1/4 cup butter 1/2 cup firmly packed brown sugar 2 Tbsp half and half (I use milk) 1 cup finely chopped walnuts Preheat oven to 350 degrees. Pour boiling water over oats in a medium size bowl; let stand until warm. In a large bowl of electric mixer, cream butter with sugars until light and fluffy. Blend in vanilla. Then add eggs, one at a time, beating well after each addition. Blend in oatmeal mixture. Stir together flour, soda, cinnamon, salt and nutmeg. Stir flour mixture into oatmeal mixture, blending lightly. Spread batter in well-greased, lightly floured 9-inch square baking pan. Bake until top of cake springs back (45 to 50 minutes). Spread top with Caramel Topping. Broil, about 4 inches from heat, until topping browns and bubbles (about 2 minutes). Let cool slightly before serving. Caramel Topping: In a small pan, melt butter.
