2-1/2 cups quick-cooking oats (not instant) 1/2 cup flour 2 tsp baking powder 5 Tbsp light stick butter 1 cup sugar 1 egg 1 egg white 1-1/2 tsp vanilla 2/3 cup reduced-fat peanut butter 1/3 cup mini-M&M's baking bits 1/4 cup mini-chocolate chips Preheat the oven to 350 degrees. Spray a 10x15" rimmed baking pan with nonstick spray. Combine the oats, flour and baking powder in a medium bowl; set aside. With an electric mixer on medium speed, beat the butter and sugar in a large bowl until light and fluffy, about 2 minutes. Add the egg, egg white, and vanilla; beat, scraping the bowl as necessary, until well blended. Add the peanut butter and beat until blended, about 1 minute. With the mixer on low speed, beat in the oat mixture just until combined. Spread the mixture in the pan; spinkle with the baking bits and chocolate chips. Bake until lightly browned and a toothpick inserted near the center comes out clean, 15-17 minutes. Cool completely on a rack. *4 dozen * 2 bars - 153 cal, 6 g fat, 22 g carb, 4 g protein (Weight Watchers Magazine - November/December 2007)Updated on Sat Aug 18 09:04:04 2001 Copyright 2001, Daniel J.
