Cherry Pie


1 1/2 lb. (3 cups) drained cherries
2 1/2 Tbsp corn starch
1/4 cup white corn syrup
3/4 to 1 cup sugar
3/4 cup juice from drained cherries
1/4 tsp almond flavoring
red food coloring

Heat cherries to a boil and add corn syrup.
Dissolve the corn starch in cold juice and add to cherry-syrup mixture.
Cook until thickened and remove from heat.
Add sugar and almond flavoring and a few drops red food coloring.
Pour this “pie-joy” mix into unbaked pie shell and place top crust over it.
Bake until golden brown and the juice begins to boil through the cherry shaped holes in top crust.
For glass pie pans, set oven at 400 degrees, for metal - 425 degrees.
