Maple Bacon Muffins


2 cups flour
8 bacon strips, cooked and crumbled
3 tsp baking powder
1/4 tsp salt
1 egg
1/2 cup milk
1/2 cup vegetable oil
2/3 cup maple syrup

In a large bowl, combine the flour, bacon, baking powder and salt.
In another bowl, whisk the egg, milk, oil and syrup until combined.
Stir into dry ingredients just until moistened.
Fill greased or paper-lined muffin cups 2/3 full.
Bake at 400 degrees for 20-25 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to wire rack.
Refrigerate leftovers.

Yield:  1 dozen
